Eating isn't just about nourishing your body, but also your soul and the Earth. At La Table du Yogi, we're reinventing the plate: simple, vibrant, and respectful. Because healthy eating is an act of awareness – for you, for others, for the planet.

La Table du Yogi is dedicated to those who wish to enjoy gourmet dishes while adhering to diets such as veganism, vegetarianism, or an alkaline diet. More broadly, it encourages a greater consumption of seasonal vegetables to reduce the consumption of animal products.

Gastronomy, a passion

My mother loved to eat. She passed on her tastes and techniques to me. I remember making my first mashed potatoes entirely by hand at the age of six. I then branched out on my own through catering courses and discovered a true passion when, for the first time in my life, I walked into a fine dining restaurant. Such balance and coherence in the menu and wine pairings truly and completely moved me. Each dish was a pinnacle of technical skill, creativity, and mastery.

Although it's not my formal training, I've catered banquets and buffets on several occasions to share my passion. I love hosting and creating memorable experiences. Preparing a meal for me is a more tangible way to show my affection.

Eosinophilic esophagitis

And one day, after indulging my emotions in countless meals of varying calories, I took one bite too many. I went for a weekend in Denmark to fulfill a dream: to eat at NOMA, one of the best restaurants in the world. NOMA, perfect! I left feeling light and without any heartburn, but then came the wine bar, the restaurant the next day, and the highway food on the way home... I felt awful, bloated, and with my esophagus burning more than usual. Friends came over for dinner, and while I was busy preparing, serving, eating, even going to get chili peppers... a piece of meat got stuck in my esophagus. My esophagus was blocked, over-irritated, disrespected... It decided that this piece of meat would stay at the gates of my stomach. I tried to drink a glass of water, but I just managed to drown. I spend the night feeling like I'm suffocating and when I go to the clinic... I learn the name of my illness "eosinophilic esophagitis" for which I have to take Nexiam "for life".

When the universe speaks to you, listen!

I decide to listen to my stomach. No radical change, but conscious listening. Am I truly hungry? Am I thirsty? Instead of focusing on immediate pleasure, I consider the aftermath. That mass-produced croissant I ate on my walk to work... I can already feel the discomfort that comes with it. The first step: listening to myself.

I decided to embark on a path of self-awareness and trained as a Kundalini yoga teacher. I discovered Ayurveda, medicine through diet (in short). I undertook a 40-day kitcheree diet (see recipe), water fasts, and more... a second step: I understand and integrate.

I decide that this illness is a message that guides me and not a problem that is eating me up inside.

This site is collaborative, and it's a way for me to make this journey easier for others. May every meal become:

- A vote for respect for the planet and animals (including ourselves)

- A sacred and universal moment

- Self-care

- A shared joy

You'll find practices associated with certain meals (40 days to purify the body, elevate the spirit, and reconnect with the essentials through a mono-diet and meditation). Pairings of dishes with non-alcoholic drinks are also included. And above all, recipes and menus that incorporate Ayurvedic standards reworked with the techniques of a gourmet restaurant. (For example, the kitcheree pictured here features a mixture of white and wild rice, roasted autumn vegetables, wrapped in a leaf of cabbage boiled in puffed rice tea, and finished with a sauce of carrots, cashews, chili, garlic, and ginger.)
